Nutritional values and health benefits A balanced diet will contain at least five portions of fruit and vegetables eaten daily. This is because some nutrients, such as vitamin C and dietary fibre/NSP, are found ONLY in fruit and vegetables so a diet lacking in fruit and vegetables can cause nutritional deficiencies and health problems. Different fruit and vegetables contain varying amounts of each nutrient, which is why a range must be eaten. • Carbohydrates are found in starchy, root vegetables and sweet fruits. • Vitamin A is found in many yellow and orange vegetables and fruits. • Vitamins C is found in citrus fruits, berries, peppers, tomatoes and some green vegetables. • Dietary fibre/NSP is found in all fruit and vegetables but excellent sources are leeks, berries, figs and peas. Berries are good sources of dietary fibre/NSP.
