91 FRUIT AND VEGETABLES SECTION 3 Why fruit and vegetables are cooked Seasonality Foods are in season when they are ripe and ready to harvest or pick. Seasonal fruit and vegetables will be tastier and more nutritious compared to the same foods ‘forced’ to grow out of season.
